Many countries like Liberia, the Congo Democratic Republic, Palau and Cook Islands are offering colorized coins. They are designed with the collector in mind. The coins from Palau offer a variety of scenes from the ocean and usually have a mermaid on the reverse.

Both Liberia and the Congo Democratic Republic offer wild life protection coins, including the parrot shown on this page. Cook Islands also released a series titled "Man's best friends" which includes both cats and dogs.

There are also colorized coins of the the the Pope, some of the olympics, and other subjects like guitar coins, but my favorite by far are the ones of Palau with views from the ocean.
